This has to be one of the BEST banana bread recipes out there! It is moist, fluffy, easy to make and delicious! What's more you do not even need a mixer to make it, two bowls and a fork should do nicely. Also, don't let the cream cheese filling fool you into thinking this is too complicated. If you can make regular banana bread, you can make this too
Banana bread is at the top of the list as my all time favorite dessert, although it is more than just dessert. Adjusting the sweetness can bring banana bread closer to the realm savory so it goes great with jams and spreads. Adding filling, like cream cheese, is a great way to put a new twist on an old favorite.
In this recipe, I have added Greek yogurt to the bread mixture to help keep it super moist and fluffy.
If you haven't used cream cheese in recipes before, don't forget to soften it. You can do this by leaving it on the table for about an hour. As you can see from the video, I was too eager to chow down on this bread to wait so my cream cheese filling was a little lumpy. If your filling is lumpy too, don't worry, it will still turn out great! One thing to keep in mind is that once you add the flour for the bread mixture, don't mix too much. Mixing too much will cause the bread to be tougher and more dense.
Most importantly, keep an eye on your bread while it bakes. Ovens are different, elevations are different and bananas have different moisture content. It should be golden brown on top and a toothpick should come out clean when it is done.

2 ripe bananas

1 large egg, beaten

½ cup light brown sugar

¼ cup granulated sugar

½ cup butter, softened

1 teaspoon vanilla extract

¼ cup Greek yogurt

1 cup all-purpose flour

Pinch of salt

1 teaspoon baking soda
Cream Cheese Filling

1 large egg
-
4 ounces softened cream cheese (½ block)

¼ cup granulated sugar
-
3 tablespoons all-purpose flour
Instructions:
Preheat the oven to 350˚F
In a medium bowl, mash bananas.
Mix eggs, brown sugar, white sugar, butter, vanilla extract, and yogurt into the mixture.
Add flour, salt, and baking soda and mix until well combined.
Cream cheese filling: mix egg, cream cheese, sugar, and flour in a small bowl.
Pour half the banana batter into a greased 9x5-inch bread pan.
Pour cream cheese filling evenly over the banana batter. Pour the remaining banana batter on top of the cream cheese filling.
Bake about 50 minutes, or until a toothpick comes out clean from the middle of the bread.
Allow to cool for 10 to 15 minutes before serving
